Ingredients

  • Mushroom Filling
  • Uncooked brown lentils, 3/4 cup
  • Olive Oil 1tsp
  • Crushed Garlic Cloves 4
  • Chopped Medium Onion
  • Grated Carrot 1
  • Chopped Celery Stalks 2
  • Red Wine 1/2 Cup
  • Cremini Mushrooms, 12 oz
  • Dried Thyme 2tsps
  • Sage 2tsps
  • Rosemary 2tsps
  • Soy Sauce 2tbsp
  • Dijon Mustard 2tbsp
  • Vegan Worcestershire Sauce 1tbsp
  • Crushed Black Pepper, to taste
  • Paprika 1tsp
  • Salt 1tsp

For Flax Egg

  • Ground flaxseeds, 2 tbsp
  • Water 5tbsps

For Pastries

Frozen Puff Pastries, 2 sheets

Ingredient Notes

Brown Lentils: I used uncooked lentils to prepare the fillings. You can also use canned lentils. It gives a nutty and meaty taste.
Puff pastry sheets: You can use any store-bought sheets. I recommend using Pepperidge Farm sheets.
Olive Oil: Replace it with any cooking oil like avocado or vegan oil.
Mushrooms: Fresh or dried herbs work well with this dish. Cremini, portobello, shiitake, and oyster mushrooms are good options. Choose the one that suits your taste.
Red wine: It is an optional ingredient.

Instructions

  1. Defrost the frozen puff pastries at normal temperature for 10-20 minutes.
  2. Next, warm the oven to 400 degrees to bake Wellington.

Preparation of Mushroom and lentil filling

  1. Add water and lentils to a cooker and place it on high heat.
  2. Cook it for 8–14 minutes until the lentil is cooked.
  3. After 14 minutes, open the cooker and remove the extra water.
  4. Shift the cooked lentils into a bowl and set aside.
  5. Then, heat the oil for 2 or 3 minutes on medium flame.
  6. Add onions, celery stalks, crushed garlic, black pepper, carrots, and salt to this pan.
  7. Cook all ingredients for 5-8 minutes, or until vegetables are tender.
  8. Next, add cremini mushrooms and red wine to this mixture.
  9. Simmer it for 7-10 minutes, or until wine is absorbed.
  10. Add sage, thyme, soy sauce, rosemary, Vegan Worcestershire Sauce, paprika, and Dijon mustard in this pan.
  11. Combine all ingredients and cook it for 2-3 minutes. Set aside the mixture.
  12. Meanwhile, add flax seeds and water in a bowl.
  13. Mix it and set aside for 10-20 minutes.
  14. Mash the cooked lentils with the help of a fork or hands.
  15. Add this mashed lentil with flax seeds to the mushroom mixture.
  16. Combine all ingredients. The filling is ready.

Assembling

  1. Place the puff pastry into a floured place and roll it about 9×12 inches.
  2. Add the lentil mixture to this pastry and fold it.
  3. Seal the edges with a flax egg to prevent filling leakage.
  4. Prepare all pastries with the same procedure.
  5. Shift all prepared pastries into a greased baking tray.
  6. Brush the outer layer with cooking oil.
  7. Bake it for 30-45 minutes until its outer layer is brown.
  8. After 45 minutes, place the baked pastries in a serving dish.
  9. Cut it into slices and serve it with any sauce.

Tips

Substitute onions with leeks to add more taste to the dish.
Seasonal squash is also the best option. It will give a unique flavor.
You can use fresh herbs as an alternative to dried herbs.
Don’t overfill the pastry so its filling won’t leak.
Serve it with vegan tomato sauce or gravy.

Notes

First, we will cook mushrooms, then simmer them with other filling ingredients.

Storage Information

Preparation: You can prepare the filling of this dish three days ahead of time and refrigerate it for later use.
Fridge: Place this leftover dish in a closed box and refrigerate it for 4-6 days. Enjoy it later.
Freezer: Wrap the slices of Wellington in plastic sheets and transfer them to tight jars. Freeze these jars for 2-3 months.
Microwave: Reheat the chilled slices in a microwave oven for 3-4 minutes until it’s completely heated.
