INGREDIENT NOTES:
ZUCCHINI:
- It makes the outside of the spring rolls and replaces traditional spring-roll wrappers. Zucchini makes the recipe light and vegan as well. Utilize yellow squash as another idea.
VEGAN COTTAGE CHEESE:
- This cheese holds the carrots and onions together. It provides a soft and rich texture to the rolls. You may use mashed firm tofu as an alternative.
OLIVE OIL SPRAY:
- It makes the zucchini brown while frying and keeps them from getting dry. Include avocado oil instead.
HERBS:
- They make the rolls taste fresh and colorful. Herbs include parsley, cilantro, basil, or mint. You may use dried herbs as a substitute.
INSTRUCTIONS:
- First, dry the washed zucchini properly, then slice it lengthwise using a peeler.
- Slice the zucchini evenly, then dry it well on the kitchen towel.
- Mix vegan cottage cheese, carrots, green onions, soy sauce, garlic powder, and fresh herbs in the mixing bowl.
- Adjust the taste of the filling and put one ribbon flat on the clean surface.
- Put one spoonful of filling near one end and roll the zucchini around it.
- Now put the roll seam-side down and repeat the steps with remaining filling and zucchini.
- Warm the air-fryer for 3 minutes at 375°F and spray the rolls with olive oil.
- Put the single layer of rolls in the air fryer and air fry for ten minutes.
- Lastly, cool the rolls for two minutes, then garnish with herbs and serve.
