INSTRUCTIONS:

  1. First, dry the washed zucchini properly, then slice it lengthwise using a peeler.
  2. Slice the zucchini evenly, then dry it well on the kitchen towel.
  3. Mix vegan cottage cheese, carrots, green onions, soy sauce, garlic powder, and fresh herbs in the mixing bowl.
  4. Adjust the taste of the filling and put one ribbon flat on the clean surface.
  5. Put one spoonful of filling near one end and roll the zucchini around it.
  6. Now put the roll seam-side down and repeat the steps with remaining filling and zucchini.
  7. Warm the air-fryer for 3 minutes at 375°F and spray the rolls with olive oil.
  8. Put the single layer of rolls in the air fryer and air fry for ten minutes.
  9. Lastly, cool the rolls for two minutes, then garnish with herbs and serve.
