Vegan Apple Pie Recipe: Servings: 8

Ingredients: For the Crust:

  • 2 1/2 cups all-purpose flour
  • 1 cup vegan butter, chilled and cubed
  • 1 teaspoon salt
  • 6-8 tablespoons ice water

For the Filling:

  • 6-7 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon vegan butter, cut into small pieces

Instructions: For the Crust:

  1. In a food processor, combine the flour and salt. Add the chilled vegan butter and pulse until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, and pulse until the dough starts to come together.
  3. Turn the dough out onto a floured surface and gently knead it until it forms a ball. Divide the dough into two portions, flatten each into a disk, and wrap them in plastic wrap. Refrigerate for at least 1 hour.
For the Filling:
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly.
Assembling and Baking:
  1. On a floured surface, roll out one of the chilled dough disks to fit your pie dish. Carefully transfer the dough to the dish, pressing it gently into the bottom and sides.
  2. Spoon the apple filling into the prepared crust, mounding it slightly in the center. Dot the filling with small pieces of vegan butter.
  3. Roll out the second dough disk and place it over the filling. Trim any excess dough and crimp the edges to seal the pie.
  4. Cut a few slits on the top crust to allow steam to escape.
  5. Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  6. If the edges of the crust start to brown too quickly, you can cover them with aluminum foil.
  7. Once baked, remove the pie from the oven and let it cool on a wire rack before slicing and serving.
