  • 1 cup raw cashews, soaked and drained

  • 2 tablespoons lemon juice
  • 2 tablespoons nutritional yeast
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon fresh thyme leaves, stripped from the stem
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2-3 tablespoons water (as needed for blending)

Instructions:

  1. Start by soaking the cashews. Place the cashews in a bowl and cover them with water. Let them soak for at least 2-4 hours or overnight. Drain and rinse before using.
  2. In a food processor or high-speed blender, combine the soaked cashews, minced garlic, lemon juice, nutritional yeast, salt, and black pepper.
  3. Blend the mixture on high until smooth and creamy, adding water as needed to achieve your desired consistency.
  4. Scrape down the sides of the processor or blender as needed to ensure all ingredients are well incorporated.
  5. Transfer the creamy mixture to a mixing bowl and fold in the finely chopped fresh parsley, chives, dill, thyme leaves, dried oregano, dried basil, and crushed red pepper flakes (if using).
