INGREDIENTS:
- Two big mushrooms called the mane of a lion
- Two teaspoons of olive oil
- One tablespoon of tamari/soy sauce
- A single teaspoon of powdered garlic
- Half a teaspoon of turmeric powder for onions
- A tablespoon of paprika smoked
- One tablespoon of vinegar with balsamic
- To taste, add salt and black pepper.

Lion Mane mushrooms:
- These mushrooms are succulent, veiny & meaty by their own nature. They have a stringy texture that shreds like chicken or steak. The mushrooms should be fresh and firm.
Olive Oil:
- Gives crunchiness and taste. You may also use neutral oil, like avocado oil.
Soy Sauce or Tamari:
- Adds a deep, salty flavor. Use tamari if you are gluten-free.
Garlic Powder:
- These are spices that give a savory background. As it cooks, they absorb into the mushroom.
Smoked Paprika:
- Adds a grilled, smoky flavor. You may omit it or substitute paprika, which you can use instead.
Balsamic Vinegar:
- Gives tang and cuts against the umami. This also assists in caramelizing the peripheries.
INSTRUCTIONS:
- Use a dry cloth to clean the mushrooms.
- Cut into large slices after cutting off the base.
- Combine the avocado oil, soybean paste, paprika, balsamic, onion & garlic powders in a bowl.
- Apply this mixture to each slice of mushroom on both sides.
- To absorb the taste, let them sit for five to ten minutes.
- A skillet should be heated to medium heat.
- If necessary, add a little oil.
- Add the mushrooms to the skillet.
- To flatten, lightly press with a spatula.
- Cook each side for 5 to 6 minutes.
- When the mushrooms are crisp and golden, turn them over.
- Add salt and pepper for seasoning.
- Remove once fully heated and browned on both sides.
- Provide it hot with your preferred sides.
- If you want to decorate, you can do it with herbs.
TIPS:
- Cook the mushrooms under pressure with a spatula so that they are like steaks.
- Do not overfill the pan. Fry them in batches to get them evenly brown.
- Drop some vegan Worcestershire sauce to intensify the flavor.
- I recommend it with vegan gravy or chimichurri to spice it up.
- These can also be served within wraps or sandwiches.
- If you want a smoky turn, cook the mushrooms over a grill, rather than in a pan.
- Serve with some mashed potatoes or roasted carrots.

FRIDGE:
- Put any remaining steaks of mushrooms in a tightly sealed container. Keep in your freezer for at least three days. To maintain the crunchy ends, warm in an oven or skillet.
FREEZER:
- Not the best. When frozen, lion’s mane mushrooms lose their texture. The best is fresh. To prevent mushiness, if you must freeze, wrap neatly & reheate carefully.
