- 1½ tbsp cornstarch
- 1–2 tbsp water
AVOCADO GANACHE:
- 50 g avocado
- 100 g vegan white chocolate
- A few drops of green food coloring
- ⅓ cup thick canned coconut cream
INGREDIENT NOTES:
AVOCADO:
- It gives moisture and a naturally creamy texture to the cake. Avocado replaces some of the richness normally provided by eggs and dairy. You can use mashed ripe banana instead, although the taste will change.
COCONUT EXTRACT:
- Coconut extract gives the cake a clear coconut flavor and adds a tropical taste. You can use coconut milk instead of some of the vegan milk, but the coconut flavor will be milder.
VEGAN BLOCK BUTTER:
- Butter makes a creamy and smooth frosting for the cake. Vegan block butter works best because it usually gives a firmer frosting. You can use vegan spreadable margarine as a replacement.
RASPBERRIES:
- They give the cake a bright fruity flavor that works perfectly with the lime and coconut. Strawberries or blueberries are a good substitute to include.
COCONUT CREAM:
- We use coconut cream to make the creamy and rich base of the ganache. You can utilize vegan heavy cream as per your preference.
INSTRUCTIONS:
MAKE THE CAKE:
- First, grease the cake pans and cover them with baking paper, then warm the oven to 180°C.
- Blend vegan milk, avocado, sugar, oil, lime juice, lime zest, vanilla, coconut extract, and food coloring in the large bowl.
- Mix flour, baking powder, salt, and baking soda properly in the different bowl.
- Stir the dry ingredients well into the wet mixture and divide the batter evenly into two pans.
- Bake the cakes for 35 minutes, then cool them in the pan for 15 minutes.
- Transfer the cake pans to the wire rack and completely cool them.
PREPARE THE BUTTERCREAM, JAM & GANACHE:
- Beat the vegan butter and slowly add the powdered sugar to it.
- Include vanilla and lime juice, then beat again to make the smooth buttercream.
- Cook the raspberries, sugar, cornstarch, and water in the saucepan over a medium-low flame.
- Mash the berries gently and simmer the ingredients for ten minutes, then cool the jam.
- Warm the coconut cream in the saucepan, then remove it from the flame.
- Add vegan white chocolate to the cream for 5 minutes, then blend the avocado into the cream.
- Include a few drops of green food coloring and cool the avocado ganache.
ASSEMBLE THE CAKE & SERVE:
- Trim the tops of the cakes; put one cake on the plate.
- Spread 3/4 cup buttercream on the cake and pipe the border around the edge.
- Then include the cooled raspberry jam in the center and put the second cake layer on top.
- Cover the top and sides of the cake with buttercream and drizzle avocado ganache on the sides.
- Pipe extra buttercream on top and decorate the cake with lime zest, raspberries, coconut, and lime slices.
- Lastly, chill the cake for some time, then slice and serve.
