Vegan Broccoli Soup

Vegan Broccoli Soup

 

Ingredients:

  • Coconut cream 8 tbsp.
  • Water 3 cups
  • Vegetable stock 3 cups
  • Garlic 2 cloves
  • Onion 1 medium
  • Olive oil 1 tbsp.
  • Broccoli 2 medium heads

Instructions:

  1. Take the broccoli and separate the stem and its head florets.
  2. Peel the stems of the broccoli by using your hands or the knife.
  3. Chop Both parts of the broccoli.
  4. Add olive oil to a pan and then set the pan over heat.
  5. Cut the onion into slices and then add in the oil and saute for a few minutes until its color changes to golden brown.
  6. Add the garlic into it and then cook for 1 minute.
  7. Add the vegetable stock, and water, along with the stems of broccoli. Cover the pot, lower the flame, and then cover it for almost 15 minutes. Boil it until the broccoli becomes tender.
  8. Add the broccoli florets and then cook again until it color changes to bright green.
  9. After all the process, use a blender and blend the soup properly by adding salt and coconut cream.
  10. It is now ready for serving.
Notes:
  • You can use a package of coconut cream, if it is not available then use it by scooping out the top of the canned coconut milk.
