Ingredients:

For taco filling:
  • Olive oil 2 tbsp.
  • Sea salt 1/2 tsp.
  • Red pepper flakes 1/2 tsp.
  • Cumin 1/2 tsp.
  • Chili powder 1/2 tsp.
  • Minced garlic 2 cloves
  • Onion 1 diced
  • Lentils 4 cup
  • Vegetable broth 1/2 cup
  • Oregano 1/4 tsp.
For toppings:
  • Salsa 1/2 cup
  • 3 grated carrots
  • Avocado 1 chopped
  • Finely chopped cilantro 1/2 cup
  • 1 diced green pepper
  • Taco shells

Instructions:

  1. Grab a large pan from the kitchen and add and heat the olive oil in the required quantity as mentioned.
  2. Dice the onion and the garlic and cook perfectly in olive oil.
  3. Stir and cook them for almost 3 minutes. ( Do not burn).
  4. Add the rinsed lentils and then season them with oregano, chili powder, and cumin for the aroma and taste.
  5. Add the vegetable broth in it and then boil it on a high flame.
  6. Cover the pan with the lid and then simmer until the lentils absorb all the broth and become soft. If the lentils are not cooked completely add more broth or you can use the fresh water in it.
  7. Drain out the excess water if the lentils are properly cooked.
  8. Now, finely chop the taco-filling components.
  9. Take the lentils out in a serving bowl and then get ready to assemble them.
  10. Take the taco shells, add the lentil mixture, and top with your favorites.
