- ¾ cup coconut sugar or other granulated sweetener
- 1 cup unsweetened almond milk or other plant-based milk
- ⅓ cup melted coconut oil or other vegetable oil
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2 large bananas)
- ½ cup chopped nuts (walnuts, pecans) or dairy-free chocolate chips (optional)
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon.
