Vegan Muffin Recipe

Vegan Muffin Recipe:

Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¾ cup coconut sugar or other granulated sweetener
  • 1 cup unsweetened almond milk or other plant-based milk
  • ⅓ cup melted coconut oil or other vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 large bananas)
  • ½ cup chopped nuts (walnuts, pecans) or dairy-free chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, combine the coconut sugar, almond milk, melted coconut oil, and vanilla extract. Mix until well incorporated.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.
  5. Gently fold in the mashed bananas and chopped nuts or chocolate chips if using.
  6. Divide the batter evenly among the muffin cups, filling each cup about 2/3 to 3/4 full.
  7. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few crumbs attached.
  8. Once baked, remove the muffin tin from the oven and let the muffins cool in the tin for a few minutes. Then transfer the muffins to a wire rack to cool completely.
