Vegan Mushroom Stew

Ingredients:
- Carrots diced 2
- All-purpose flour 5 tbsp.
- Vegetable broth 4 cup
- Minced Garlic 1 tsp.
- Onion 1
- Olive oil 5 tbsp.
- Red vine 1 cup
- Paprika 1 tsp.
- pepper 1/4 tsp.
- Salt
- Tomato paste 1/2 tsp.
- Fresh thyme 2 tbsp.
- Parsley 1/3 cup
- Peas 1 cup
- Green beans 1 cup
- Mushrooms 20 oz.
Instructions:
- Put a large pot on a medium flame and then heat the oil in it.
- Slash the onions appropriately and then add them to the oil and fry them for almost 3 minutes.
- Add the minced garlic and then cook and saute again until fragrant.
- Use another pot, add the oil to it, and then add flour and mix it until no lumps are left in the pot.
- Gradually add the required amount of vegetable broth and then combine it well.
- Add the mentioned spices and then veggies and mix them well.
- Add the red wine to it and let it simmer for a few minutes and then add the flour and the broth mixture in it.
- Cover it properly and then give it almost 1 or 2 hours to simmer over the low flame.
- Moreover, you can adjust the seasoning as you need.
