Vegan Pozole
The Vegan Pozole is a very delicious recipe. This nutritious vegan pozole has a vibrant color and a rich taste. It tastes much better the next day and is simple to make. Ingredients:
- Ground cumin: 2 tsp.
- Poblano chili: 1
- Guaillo chilies: 2–4.
- Oregano: 2 tsp.
- Garlic minced: 4
- Onion: 1
- Salt
- Cilantro stems: 1/3 cup.
- Hominy: 1/2 cup.
- Tomato paste: 1 tbsp.
- Epazote: 1/2 teaspoon.
- Chili powder: 2 tsp.
- Vegetable broth: 6 cups
- Balck beans: 1/2 cup.
- Ground cumin: 2 tsp.
- Pepper
- Chipotle powder: 1/4 tsp.
- Bay leaves: 2
Instructions:
- Tear the guaillo chilies into bits after removing the seeds. In a pan, dry fry for approximately two minutes, or whenever they just begin to smell aromatic and turn darker. Put aside.
- Oil-sautéd onions and poblano for approximately five minutes.
- Add the chopped garlic and cook for about a minute, or until fragrant, adding the epazote (or bay leaves), chili powder, and then adding the cumin, oregano, and chipotle powder.
- Add the salt and four cups of the veggie broth. Heat through to a simmer.
- Pour the remaining two cups of broth, tomato paste, guajillo chilies, and cilantro stems into a blender; process until smooth, and transfer to a soup pot.
- Simmer the black beans and hominy for ten minutes. When the bell peppers are just tender, add them and simmer for a few more minutes.
Notes:
- Verify the amount of salt in the beans, hominy, and broth and make the necessary adjustments.
- While the broth is cooking, add one or two teaspoons of masa flour for a richer soup.
