ZUCCHINI:

  • This is the main component in the recipe that absorbs the seasonings well. It gives moisture to make the dish juicy. Yellow summer squash is good to include as an alternative.

CORN KERNELS:

  • It is a Tex-Mex ingredient that gives sweet taste and texture to the casserole. Corn kernels maintain the smoky chili powder and cumin as well. You may use diced roasted bell peppers as another idea.

CHUNKY SALSA:

  • Salsa gives authentic Tex-Mex taste in the meal and makes the sauce of the casserole. You may use taco sauce as a substitute.

VEGAN CHEDDAR CHEESE:

  • It makes the cheesy topping to make the casserole rich and comforting. Vegan cheese melts over the vegetables and gives a golden layer. You may use vegan mozzarella as another idea.
