Ingredients: For the Crust:
- 2 1/2 cups all-purpose flour
- 1 cup vegan butter, chilled and cubed
- 1 teaspoon salt
- 6-8 tablespoons ice water
For the Filling:
- 6-7 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon vegan butter, cut into small pieces
Instructions: For the Crust:
- In a food processor, combine the flour and salt. Add the chilled vegan butter and pulse until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, and pulse until the dough starts to come together.
- Turn the dough out onto a floured surface and gently knead it until it forms a ball. Divide the dough into two portions, flatten each into a disk, and wrap them in plastic wrap. Refrigerate for at least 1 hour.
For the Filling:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly.
Assembling and Baking:
- On a floured surface, roll out one of the chilled dough disks to fit your pie dish. Carefully transfer the dough to the dish, pressing it gently into the bottom and sides.
- Spoon the apple filling into the prepared crust, mounding it slightly in the center. Dot the filling with small pieces of vegan butter.
- Roll out the second dough disk and place it over the filling. Trim any excess dough and crimp the edges to seal the pie.
- Cut a few slits on the top crust to allow steam to escape.
- Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- If the edges of the crust start to brown too quickly, you can cover them with aluminum foil.
