- Half cup diced red onion
- 1 cup halved cherry tomatoes
- Half cup diced red bell pepper
- 1 cup corn kernels
- Quarter cup chopped cilantro
- 1 diced avocado

- Half tsp ground cumin
- 3 tbsp lime juice
- ⅛ tsp black pepper
- 1 tbsp olive oil
- Quarter tsp garlic powder
- 1 tsp maple syrup
- Quarter tsp salt

SWEET POTATOES:
- We use them to include natural sweetness and a soft roasted texture in the salad. They provide color and fiber in the dish. Include butternut squash if you are not using sweet potatoes.
OLIVE OIL:
- It roasts the potatoes properly and makes their edges lightly brown. Olive oil provides a smooth texture to the dressing as well. Avocado oil is a good choice to include as a replacement.

- Rinse the drained beans and add them to the corn, red onion, tomatoes, bell pepper, and cilantro in the bowl.
- In a small bowl, whisk garlic powder, olive oil, maple syrup, salt, lime juice, cumin, and black pepper.
- Add the roasted potatoes to the salad and pour the lime dressing over it.
- Gently toss all ingredients and mix in the diced avocado at last so it does not become mushy.
