Vegan Hummus and Veggie Roll-ups

The delicious Vegan Hummus and Veggie Roll-ups are very healthy. Furthermore, a fulfilling snack that is easy to put together, totally plant-based (cruelty-free), and free of sweets. To be completely honest, we were helpless to stop eating these vegan roll-ups.

Vegan Hummus and Veggie Roll-Ups

Ingredients:

  • Hummus: 8 oz.
  • Head of Cauliflower: 1.
  • Carrots: 4.
  • Tortillas: 8 inches.
  • Broccoli: 1.

Instructions:

  1. Using a box grater or Julien peeler, shred and peel the carrots. Cut off each of the broccoli and cauliflower tops and chop them into small pieces, as the picture suggests.
  2. Slice the green onions roughly.
  3. Place an even covering of hummus, about two tablespoons worth, on a warm tortilla.
  4. Being careful not to fill up and leaving the top inside the tortilla empty, dust another thin cover of carrots on the highest
  5. Firmly unroll the tortilla, commencing at the bottom of the circular; the veggies will naturally rise to the top of the tortilla and disperse throughout the rolled-up portion as you roll.
  6. Separate the roll into six or equally-sized slices with a sharpened cutter. Spear with a toothpick, if you desire.
  7. Store in the fridge while ready to serve. The bundles keep well in the refrigerator for up to two days, but while the tortillas soften with time, they taste freshest the day they are produced.

  • The type of hummus they use significantly influences its overall taste; however, be sure to use one they adore.
  • Using the above recipe, you can produce as many roll-ups as you require. Instead of giving precise amounts, it’s merely meant to serve as a broad framework for creating things, allowing you to modify them to your exact specifications. If you’d like, you could also top these rolled-ups with avocado or a drizzle of your preferred mayonnaise. The remaining food has to be consumed the same day it is prepared to avoid it becoming waterlogged. On the other hand, remnants can be kept for as long as two days in the frig.
